The leek is part of the onion family, but has a milder flavour than its cousin.
On St David’s Day, this vegetable leaves the kitchen and appears on the parade hats
of traditional Welshmen as the national
emblem of Wales. Its creamy mildness has
earned the leek the title “king of the soup
onions”. Two of the best-known soups are
Scotland’s cock-a-leekie, made with chicken
and leeks, and vichyssoise, made famous by
a chef at the Ritz in New York.
